Ingredients

  • 100g unsalted butter
  • 2 tablespoons olive oil
  • 1.3kg perlas potatoes, cut into 2cm pieces
  • 2 red onions, finely chopped
  • 2 tablespoons chopped fresh thyme leaves
  • 175ml balsamic vinegar

Directions

Preheat oven to 170°C. Melt butter and oil over medium heat in a large baking dish or ovenproof frypan, add potato and onion and cook, stirring, for 10-15 minutes until starting to soften and turn golden. Season with salt and pepper, and add thyme and half the vinegar. Cover with foil and place in oven for 20 minutes. Remove foil, add remaining balsamic and return to oven for a further 20-30 minutes until golden and cooked through.
