Ingredients

  • 2kg Red Jacket potatoes, peeled
  • 1/4 cup Alfa One rice bran oil
  • 30g butter, cubed

Directions

  • Step 1

    Place potatoes in a saucepan. Cover with cold water. Season with salt. Bring to the boil over high heat. Reduce heat to medium. Simmer for 12 minutes or until just tender. Drain. Cool. Cut into 2.5cm pieces.

  • Step 2

    Heat oil in a frying pan over high heat. Add potatoes. Cook, shaking pan and turning potato often, for 10 minutes or until golden, crisp and tender. Stir in butter. Season with salt and pepper. Serve.
