Place potatoes into a large saucepan and cover with water. Cover saucepan and bring to boil. Uncover immediately and cook 5 mins. Drain well. Cool slightly.
Place potatoes flat side down on the baking tray. Using a fork, score lines into the potatoes to make a rough surface. Spray potatoes with oil then dust lightly with paprika and salt.
Bake for 1 hr 15 mins until crisp and golden brown. Serve immediately.
