Preheat oven to 220C/200C fan forced. Line a tray with baking paper.
Combine sea salt flakes, dried chilli flakes, smoked paprika and ground white pepper in a bowl.
Thread potatoes onto skewers. Place 1 skewer on a chopping board. Roll the skewer while cutting the potato on an angle all the way through to the skewer. Gently pull the potato out into a concertina spiral. Place on the prepared tray. Repeat with remaining potatoes. Spray with olive oil and sprinkle with the paprika mixture.
Roast for 25 minutes or until golden and crisp. Sprinkle with fresh herbs and serve with sour cream and sweet chilli sauce.
