Baby carrots with horseradish dip

  • 170g (2/3 cup) whole-egg mayonnaise (see note)
  • 1 tablespoon horseradish cream
  • 1/2 teaspoon dried dill
  • 3 bunches Beta Bites, trimmed, peeled


  • Step 1 Combine the mayonnaise, horseradish cream and dill in a serving bowl. Season with pepper.
  • Step 2 Bring a large saucepan of water to the boil over high heat. Cook the carrots for 3 minutes or until tender crisp. Refresh under cold running water. Drain. Transfer to a serving platter. Season with pepper. Serve with the horseradish dip.
