Baked fish on potatoes

  • 4 Vivaldi potatoes, scrubbed, cut into thick wedges
  • 2 tablespoons olive oil
  • 1 small leek, thinly sliced
  • 1 zucchini, halved, thinly sliced
  • 1/3 cup semi-dried tomatoes
  • 4 pink ling fish fillets
  • Lemon wedges, to serve


  • Step 1

    Preheat oven to 200°C.

  • Step 2

    Place potatoes in a large baking dish. Toss with oil. Season to taste. Bake for 20 mins. Sprinkle leek over potatoes. Bake for a further 5 mins, until tender.

  • Step 3

    Stir zucchini and tomatoes through potato mixture. Place fish on top.

  • Step 4

    Bake for a further 10-15 mins until fish flakes when tested with a fork. Serve with lemon wedges.
