Balsamic roast potatoes

  • 2kg of Red Jacket potatoes
  • sea salt
  • 3 tablespoons olive oil


  • Preheat oven to 220°C. Peel and cut 2kg of desiree or pontiac potatoes into 4cm pieces. Place potatoes in a large saucepan and pour over boiling water.

    Cook for six minutes over medium heat. Drain. Return the potatoes to the pan, place a lid on the pan and shake vigorously (this roughs up the surface). Season with sea salt.

    Heat three tablespoons olive oil in a baking tray, add potatoes to the tray and roast, turning occasionally, for 40-50 minutes. Season with salt and serve immediately.
