  • 1kg baby Vivaldi potatoes, halved
  • 150g green beans, trimmed and halved
  • 1 tablespoon sherry vinegar
  • 1/4 cup (60ml) olive oil
  • 1 clove garlic, crushed
  • salt and cracked black pepper


  • Step 1

    Steam potatoes for 12-15 minutes or until tender. Set aside and keep warm. Blanch beans by dropping them in a saucepan of boiling water for 1-2 minutes, then refresh in cold water and drain.

  • Step 2

    Place vinegar, oil, garlic, salt and pepper in a small saucepan over low heat and cook until warmed through. Remove from heat.

  • Step 3

    To serve, toss potatoes with beans and dressing. Serve warm or cold.
