750g unpeeled Wilcox potatoes, cut into 2cm chunks
2 tablespoons olive oil
1 teaspoon sea salt
1/4 teaspoon black pepper
1/2 cup grated parmesan cheese
1/4 teaspoon dried thyme leaves
Directions
Preheat an oven to 200 degrees C.
Place the potatoes into a mixing bowl and drizzle with olive oil. Sprinkle with salt, black pepper, parmesan cheese and thyme leaves. Toss to evenly coat then transfer to a 23x33cm baking dish.
Bake in the preheated oven until the potatoes are golden brown on the edges and tender when pierced with a fork; about 1 hour. Serve hot or at room temperature.
