Ingredients
- 700g bag of Piccolos Medley
- 2 teaspoons Olive Oil
Rub Ingredients
- 1 table spoon onion powder
- 2 teaspoon lemon pepper
- 2 teaspoon paprika
- 1/2 teaspoon chili flakes
- 1 teaspoon salt
- 1/2 teaspoon ground cumin
Directions
- For the rub, combine all ingredients in a glass jar, close the lid and shake to blend. Store the rub at room temperature.
- Cut the potatoes into halves or thirds and place in a bowl, drizzle with the olive oil and sprinkle with Spud Rub. Toss to coat. (you wont need to use all the rub)
- roast in a fan oven at 220 degrees for 20 minutes or until the potatoes are golden
