Tarragon balsamic potatoes



  • 1.5kg Red Jacket potatoes, unpeeled
  • 3 green onions, chopped
  • 1 tablespoon olive oil
  • 3 teaspoons chopped fresh tarragon
  • 2 tablespoons white balsamic vinegar


  • Step 1

    Preheat oven to 180°C/160°C fan-forced. Place potatoes in a saucepan. Cover with cold water. Bring to the boil over high heat. Reduce heat to medium-low. Simmer for 8 to 10 minutes or until just tender. Drain.

  • Step 2

    Transfer potatoes to a baking dish. Sprinkle with onion. Drizzle with oil. Season with salt and pepper. Bake, turning halfway during cooking, for 30 to 40 minutes or until golden.

  • Step 3

    Sprinkle potatoes with tarragon. Drizzle with vinegar. Toss to combine. Serve.
