4 medium Wilcox carrots, peeled and grated
1/2 red onion thinly sliced
2 tablespoons currants
1/4 cup chopped flat leaf parsley
DRESSING:
1/3 cup lemon juice
1 tablespoon olive oil
1 teaspoon honey
1 teaspoon bround cumin
1 teaspoon ground coriander
freshly ground pepper
In a bowl gently toss togetaher salad ingredients
In a sepperate bowl whisk together the dressing ingredients, Just before serving toss dressing through the salad.
