Carrot, Parsnip and Potato mash

Ingredients

  • 3 x Home Farm Carrots, peeled and cut into even-sized pieces
  • 3 x Parsnips, peeled and cut into even-sized pieces
  • 2 x Vivaldi potatoes, peeled and cut into even-sized pieces
  • 1/4 cup Milk
  • 2 Tbsp Margarine
  • Pinch Salt and freshly ground black pepper to taste

Directions

Boil, steam or microwave vegetables until tender.

Add milk and margarine.

Roughly mash, leaving small chunks of different vegetables within the mix.

Season generously with pepper and add salt to taste.
