Carrots with lemon and coriander




  • 3x Medium Home Farm carrots, peeled and cut at an angle to make ovals
  • 1 Tbsp Brown sugar
1 Tbsp Butter
  • 1 Tspn Grated lemon rind
  • 2 Tbsp Lemon juice
2 Tbsp Finely chopped fresh herbs e.g. coriander or Italian parsley
  • Pinch Freshly ground black pepper


Place carrots, sugar, butter, lemon rind, lemon juice and pepper in a microwave dish. 
Mix, cover and cook on high power for 4-6 minutes or until tender. 
Stir once during cooking. 
Before serving, mix the coriander through the vegetables carrots.
